Tropical Acai Protein Bowls

As a busy mom of four kids, getting a healthy breakfast is really hard. I’ve been working on getting the baby weight off, and just creating new healthy habits, so getting a dose of fruits and veggies as well as a good amount of protein to start off my day is really important to me! My friends at OLLY sent me some of their new smoothie powders and I’m a huge fan! I’ve literally eaten the vanilla protein smoothie powder every single day since I received it. Their protein powders are vegan and gluten-free and are sweetened with natural sweeteners, and includes loads of vitamins to help me stay healthy and tackle my busy days. OLLY asked me to come up with an original recipe to showcase their powders and I’m excited to share this one with you. It’s so very delicious and I feel great about eating it in the morning. Plus, my two year old asks for seconds and you can’t beat that! I also enjoy sprinkling some on oatmeal, or just stirring it with milk and having it as a snack. It’s really good, you guys! Recipe by Parsley and Pepper

Ingredients:

1 banana

2 packets frozen acai (I use Sambazon and buy it at Costco)

2 large handfuls frozen tropical fruit

1 handful spinach (optional)

1 cup almond milk

1 scoop OLLY vanilla flavored protein smoothie powder

Directions:

Blend all ingredients. This is meant to be thick, so it may take some effort on your blender’s part to get it smooth. Keep pushing ingredients down until there are no more chunks. Pour into a bowl and top with chia seeds, fresh fruit, and your favorite granola. This recipe makes enough for three acai bowls. Enjoy!
