Slow Cooked Pulled Pork

I hosted a few friends for a back to school gathering last week, and volunteered to provide a main course for the lunch. We did potluck style for the side dishes, which was nice! But I wanted something that felt like backyard picnic food, while still being somewhat gourmet. Homemade pulled pork was just right, I just dumped the ingredients in my dutch oven in the morning, and it was ready when my friends got to my house. Plus everyone seemed to really like it!  This is a great easy dinner idea, and the leftovers were really yummy with simple rice and steamed veggies. Yum!

Slow Cooked Pulled Pork

Ingredients:

2 lbs pork loin

3 T olive oil

4 cloves garlic, minced

1/4 cup molasses

1/4 cup brown sugar

GENEROUS salt. It needs a lot! I lost track of how much I added.

1/2 cup chicken broth

 

Directions:

Heat oil in a large dutch oven. Add garlic and saute until fragrant. Add pork and sear on all sides. Add molasses, brown sugar, and broth. Salt heavily. Cover and reduce heat to low and cook for about 2 hours. Shred in the pan, then continue to cook for about 30 minutes (or more, if you have the time). I haven’t tested this in a crock pot, so I don’t have much advice on if it would work or not. If you want to try it, make sure you saute the garlic and sear the pork before placing it in the crock pot.
