Mediterranean Chicken in a White Wine Butter Sauce

Can I just say, this was one of my favorite and most flavorful dinners I’ve made yet? It was so dang good and felt very fancy too. I’m hosting a baby shower dinner party in a few weeks and I plan on making this for it. It just feels so elegant, yet it didn’t take too long and is pretty fool-proof. Hope you love it like I did!

Mediterranean Chicken in a White Wine Butter Sauce

Ingredients:

2 T olive oil

2 cloves garlic, minced

3 large chicken breasts

1/2 tsp parsley

1/2 tsp oregano

1/2 tsp salt

1/2 tsp pepper

1 /2 onion, thinly sliced

1 sprig fresh rosemary

1 cup dry white wine, like chardonnay

3 T cold butter, cubed

 

Directions:

Heat oil over medium high heat. Add garlic and sautee until fragrant. Add chicken, parsley, oregano, salt, and pepper and cook for about 7 minutes on each side. Add white wine and bring to a boil. Reduce heat, add onion and rosemary, and simmer for about 7-10 minutes. Add butter and stir to incorporate. Serve over orzo pasta.

    This recipe looks delish, but I’m curious about the white wine. I’ve cooked with wine and beer, but recently decided that counsel received from the prophets is more important than the flavor of certain dishes. What do you think about cooking with alcohol?

      My personal belief is that it cooks out with every recipe I use it for, and that makes it different than drinking it for the purpose of becoming intoxicated/potentially addicted. I think it’s a personal decision that we all must make about “the spirit of the law”, and I feel comfortable cooking with it. Thanks for reading! And if you go to the vinegar section in your grocery store, there is cooking wine and that makes a good substitute if you’re looking for one.

    I just made this for dinner tonight. I followed the recipe step-by-step and it turned out delicious. I served mine with steamed green beans & rice pilaf. I’ll definitely make this again!
